Fluffy Blueberry Pancakes


I used to always want to go out to brunch on the weekend mornings, but now I always have a recipe I want to try-especially pancake recipes! Yumm.

I had some organic blueberries hibernating in the freezer that were begging to be used so I dug up this recipe from Todd. No runny pancakes in sight- just fluffy, bundles of goodness filled with juicy berries!

This was the perfect excuse for a lazy, New Years day breakfast! :)

*UPDATE* The bf requested these for a second day in a row- BIG HIT!!



Blueberry Pancakes
Makes about 8 pancakes
  • 1 1/2 cups AP flour
  • 1/2 tsp salt
  • 1 TBSP baking powder
  • 1 1/2 tsp white sugar
  • 1 egg
  • 1 cup milk (I used skim)
  • 1/2 TBSP butter, melted
  • 1/2 cup frozen blueberries, thawed
In large bowl sift (I was too hungry to sift this morning) flour, salt, baking powder, and sugar in a large bowl. In a small bowl, beat together milk and egg and pour into flour mixture. Stir to combine. Mix in butter and fold in blueberries.


Refrigerate for 15 minutes-1 hour (depending on how much time you have). I only put them in for 15 minutes while I cleaned up and heated my pan and syrup. Heat lightly-greased griddle/skillet over medium heat and scoop 1/4 cup batter onto pan for each pancake.


When bubbles form on the top of the pancake, flip over and brown on both sides. Serve with brown sugar...
... and warm maple syrup.
