"Brookie" Chocolate Chip Cookie Bars


What's not to like? Cookies...Mmmmm good! Chocolate Chips....Mmmmm good! Brownies...Mmm good! Haha for some reason when I started to write this post I thought of the episode of friends where Joey eats Rachel's trifle that has a layer of "beef sauteed with peas and onions." Seriously- its hilarious! :) My fav show. I'm cracking up just searching for the video to share with you. See it here.

I couldn't decide what to make for dessert and then found these on Bakerella. These "Brookies" are essentially cookies cooked in a pan like a brownie- um no brainer... I'll eat that! :) So yummy and easy since you just make them the old fashioned way- with a wooden spoon! My wooden spoon was covered with sticky sweet and sour sauce when I made these, but just imagine a cute wooden spoon in all my photos.

I halved this recipe and baked it in a 8x8 pan since I knew we did not need a whole pan of them. After we each had one for dessert (some of us had more than one...), I packed up a few for G's UPS man and brought the rest to work. I have gotten accused of "trying to make people fat" lately at work.... maybe its time for G to get some more coworkers! Or maybe I should meet some more neighbors...

These are soft, chewy and ooh so yummy and satisfying! Please make them for a special treat soon. You can even make them extra special by adding a dollop of sweetened whipped cream on top.


"Brookie" Chocolate Chip Cookie Bars

  • 2 3/4 cup AP flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2/3 cup butter, softened
  • 1 lb light brown sugar (2 cups)
  • 3 eggs
  • 1 tsp vanilla
  • 1 package milk or semisweet chocolate chips
  • 1 cup pecan, chopped (optional-not included in mine)


Preheat oven to 350. Sift first three ingredients into a bowl and set aside.


In another medium bowl, pour sugar over butter.


Use the back of a spoon to incorporate mixture together until butter "disappears."


Add eggs one at a time, stirring well after each.


Add vanilla, chocolate chips and nuts- mix well.


Add dry ingredients and mix until well-combined. Resist the urge to eat dough with a spoon. Drool...


Spray 13x9 pan with non-stick cooking spray and spread dough evenly in pan.


Bake 30 minutes. May need to bake longer, but don't overcook! Take out when golden. :)


Cut into pieces. Try not to burn your mouth!


*If you want to halve this recipe, halve all of the ingredients and use 2 eggs. Bake in 8x8 pan for 25 minutes!

  3. These ARE amazing! Also amazing is cookie cake- recipe coming tomorrow AM! :) You'll have to wipe away your drool while you decide which to make!
